Rantings of an Amateur Chef

I have a number of skillets in my kitchen. I find that most of the time, though, I am pulling out my largest over and over. Maybe it is cooking for a family and I need the space, or maybe just habit. How about you? Here’s Maggie with a skillet of her own….

This recipe came through recently on the Food Network Magazine Recipe of the Day. For some reason, I am attracted to the word “skillet”. When a recipe includes the word “skillet”, I automatically assume the dish will be simple, rustic, and easy.

This one hit rustic, for sure. While some of the prep was not simple, I didn’t have too much trouble taking a few shortcuts to simplify enough to suit me. On any given weekend I can be cooking for 5-10 people, depending upon how many boy and girlfriends are visiting. Simple is crucial in my…

Milestones-three hundred and sixty five more chances


tech-trends-2014Here we are again, the dawn of a new year….leaving behind the ups and downs of the last year…looking forward to what’s next. I adore the opportunity for new possibilities, doors to be opened or roads to travel. Each one brings hope, some of them may be not so great but there is always that moment of question…anticipation…the unknown.

Like most Americans, I must acknowledge (..or at least act like I should!)….the need for a better diet as well as an exercise program which for me is…..just parking my car further away from the door; the hope for financial security and good health and my family to prosper. We all have in our minds, resolutions ….that we hold dear, hoping against hope that we make it past January without failure.

These resolutions or “goals” are many and the start of a new year jump-start us in the right direction. God bless our hearts for the effort! I have said for the past six years, in my heart, that I do not want to be in the same shape (in all areas) this time next year and I think this next year may be the winner. I have a hope that is beyond me. Beyond my brain and into my soul, my heart…..hope.

My anticipation is starting…what will it be first? Will it be the loss of five or fifty (it could happen!) Pounds? Will it be a true love for one of my four kids?(oops! Excluding my seventeen year old!)…Will it be the welcoming of many new souls born into to kingdom of God…I hope so!

Whatever “IT” is…..I look forward to the challenge. We got this ….we spunky Americans are stubborn and bold and will not stop till we get what we want. Yes, Hillary Clinton….it does take a village and we will always stand together against anyone who tries to push us around. Our individual families as well as our towns and country will always overcome.

Today I conquered a challenge, silly as it may sound, but I have for the first time ever….wait for it…….made/cooked  dumplings, chicken and dumplings actually. My sister did it first on Christmas day, they were de-lish! I know the secret now ……..so I tried it. It is ALL ABOUT THE BROTH!! This has been my probably twentieth try…..finally successful!

This southern girl needed to do this one….my mom was the pro at them, but sadly she will make no more of them, my granny who taught my mom was a ….card-carrying member of the southern woman’s chicken and dumplings cooking team. It could be an Olympic sport. SHE WAS A MASTER!

I now am proud to say I have done it…EUREAKA!!!!! Superbly I might add and I will brag about it……a Milestone-three hundred and sixty five more chances to do something great…..welcome new year!

Majestic Cornbread

The problem is I don’t think I want to be free from my love affair with cornbread……..I just am not sure that it would even help. Some things only happen after prayer and fasting…..um ok….have not prayed about it…check! and I know I haven’t fasted…check! So what’s a girl to do?

The fact that I have been raised on cornbread doesn’t help any….yes Oprah I am blaming it on my Mother….and my Grandmother and all of the Aunts and family friends who have made this delicious addition to the southern feast we call….”family dinner!” Actually I really don’t so much blame them, I more over give them credit. The rich heritage I was raised on in the South is one that I am not ashamed of nor embarrassed by. We have the majestic southern cornbread……don’t be jealous!

ImageAny one can make it….but we southern girls do it best! My raisin’ taught me to use Lard…yikes! Thankfully I do not choose to do that. That is one small step in the right direction but its all downhill after that.

I do feel that you must have the correct equipment starting with the Iron Skillet. Or should I say a “seasoned” Iron Skillet. New ones can be used, but the first few batches may not be as good as the latter ones…..Also the oven has to HOT…not just hot but, REALLY HOT with a chunk of butter melting while the skillet is getting hot…..the skillet MUST be HOT before the batter goes in. The sizzle is the sound you listen for when you pour in the batter.

The skillet, in my mind is the only way to cook the bread, with one exception and only one. My Mom used to have this cute little IRON pan with six little corn on cob shaped individual…..precious, small cornbread muffin-type muffins. They were very crispy with a soft center and really cute. Gotta love old memories!

The cornbread cooks for about twenty minutes or so…I prefer it to be on the crispy side. There are times that I consider cooking dinners that go especially well with cornbread. I suppose that would be considered an addictive personality when you plan the meal around the bread? I can say honestly the bread is the star….yes I do love good bread. This is why I do not cook bread usually. Imagine if I did….I would be the size of “the broad side of a barn!!”….okay I know I am nearly there….shush!

The once, ever so often batch of cornbread is my guilty pleasure. But if I had to choose between bread and meat, I would choose bread! This is ridiculous considering my body type…proof is in the (puddin’!) or bread, so to speak, goes right to my middle! But on those few occasions when I am at a restaurant that has great bread or I make the occasional skillet of lovely cornbread, I allow myself to enjoy. You only live once, right? Slather on the butter……mmmmmmmmmmm!

What’s for Dinner?-redux

Lately on Sunday afternoons, we have been blessed to have a convergence of our boys back at home. This is an especially sweet time since two of them live away. The closeness of them to be able to drive back has been a blessing and as boys will be boys….their time is well spent…in battle….once again. Kickin’ it old school today on the Nintendo 64!

 

Later they ventured off to see the new movie, The Avengers, which is GREAT! I went to see opening day with my hubby, not exactly happy, but in a few minutes I was thrilled I went. Hilarious and exciting and really good. Who knew I would like it? Mindless fun!So the boys left, house was empty…I was all alone……pure heaven! But instead of taking a good ole nap for which I am sorry for now, I got a notion to cook PIE!

made. Actually her recipe is a secret one. So secret it even has a warning from my sister written on card!   SO in the name of keeping it secret ….I can’t divulge!

Just a few hints to encourage the making of PIE!

I must apologize for my meringue though. As I was standing in front of oven….talking on the phone (first mistake) to my sister (the other one) about not burning the meringue!……I nearly BURNT THE

MERINGUE!!!  So very frustrating…throw the phone down, burn my fingers…fog my glasses and get them out of oven. The good news is they weren’t actually scorched, just looks a bit brown and tastes great, very light actually. My husband won’t care…he always slings it off and calls it “calf slobber!” He hates it. He got that gem from his grandfather…who was the funniest man alive.

MMMMMMMMM!!

SO enjoy the pics and this was what’s for dinner at our house! Okay, we actually did have great deli sandwiches for which we made with homemade buns (from the Deli), Turkey/Roast Beef/Ham/lettuce/tomatoes. mayo/mustard/Swiss and cheddar cheese and a splash of Italian dressing and a shake of Parmesan Cheese then S&P to taste. Add Kosher Dill strips and chips on the side. It was awesome but

when there is PIE….it can’t hold a candle!

note—important you use Argo Cornstarch, Hershey’s Cocoa, real butter and vanilla! Pie Crust…well, I take a short cut there but just as good!
